The kohen is to burn them on the altar. It is the food of the offering made by fire, for a soothing aroma. All fat is for Adonai.

The anointed kohen who will be in his place from among his sons is to offer it. As an eternal statute, it must be entirely burnt up as smoke to Adonai.

Numbers 19:21
